Instructions

Step 1
Cook the couscous: Place couscous in a bowl and pour hot vegetable broth over it. Cover and let steam for 5 minutes. Fluff with a fork.

Prep the salad base: In a large bowl, combine sliced strawberries, diced cucumber, red onion, lemon juice, olive oil, salt, and pepper. Toss gently.
Step 3
Combine: Add the fluffed couscous and basil to the bowl and mix to combine. Let sit for 5–10 minutes to blend flavors.
Step 4
Top & serve: Crumble almond feta on top just before serving. Sprinkle with optional nuts or seeds for extra texture.
