Instructions

Step 1
Prep the mushrooms: Gently clean the portobellos and marinate them in a bowl with olive oil, balsamic vinegar, soy sauce, garlic powder and pepper for 10 minutes.
Step 2
Caramelize the onion: Heat olive oil in a pan over low heat. Add the onion slices and a pinch of salt. Cook for 10–15 minutes until soft and golden. Add maple syrup in the final 2 minutes.
Step 3
Roast or grill the mushrooms: Preheat a grill or oven to 200°C. Place mushrooms gill-side up and roast for 10–15 minutes, flipping halfway. They should be juicy but not soggy.
Step 4
Make the balsamic glaze: In a small pan, simmer balsamic vinegar, soy sauce and maple syrup until reduced by half (or stir in cornstarch for quicker thickening).
Step 5
Assemble your burger: Toast the buns, spread mayo or mustard, add lettuce or greens, place the roasted mushroom on top, add caramelized onions, drizzle with balsamic glaze, and add optional toppings like tomato or avocado.
