Instructions

Step 1
Cook the pasta: Boil the pasta in salted water until al dente. Reserve 1 cup of pasta water, then drain.
Step 2
Make the sauce: In a blender, combine silken tofu, sun-dried tomatoes, garlic, lemon juice, onion powder, nutritional yeast, and a splash of pasta water. Blend until silky smooth. Add more water for desired creaminess.
Step 3
Combine: Return drained pasta to the pot. Pour in the sauce and heat gently over low heat while stirring. Add more pasta water if needed to coat evenly.
Step 4
Season & garnish: Taste and adjust with salt and pepper. Garnish with chopped fresh basil, parsley, or extra sun-dried tomato pieces.
