Tips & Variations
  • Use soba or ramen noodles if udon isn’t available

Instructions

Step 1
Make the tofu crumbs: Crumble the tofu with your hands or a fork. Mix with soy sauce, paprika, and nutritional yeast. Fry in a non-stick pan over medium heat (with or without oil) until golden and crispy about 7–10 minutes.
Step 2
Cook the noodles: Prepare the udon according to package instructions. Drain and rinse if needed.
Step 3
Make the chili oil: In a small pan, heat oil. Add garlic and chili flakes and sizzle over low heat for 1–2 minutes until fragrant, don’t let it burn! Remove from heat.
Step 4
Assemble: Toss the cooked udon in the warm chili oil. Plate, top with crispy tofu crumbs and optional toppings like scallions, sesame seeds or vinegar.
