Instructions

Step 1
Sauté the onion in olive oil over medium heat for 5 minutes until soft and translucent.
Step 2
Add garlic, cumin, paprika, and cinnamon. Cook for 1 minute until fragrant.
Step 3
Add carrot, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Step 4
While the soup simmers, roast the grapes. Toss them with olive oil and roast in a 200°C (400°F) oven for 15–20 minutes, until blistered and caramelized.
Step 5
Add the coconut milk to the soup. Use an immersion blender to blend partially or fully, depending on your texture preference. Season with salt and pepper.
Step 6
Serve in bowls, topped with the roasted grapes, a sprinkle of sumac, and fresh herbs.
