Instructions

Step 1
Make the matcha chia layer: In a bowl or jar, whisk plant milk with matcha until smooth. Stir in chia seeds and maple syrup. Let sit for 10 minutes, then stir again to avoid clumping. Cover and chill for at least 1 hour or overnight
Step 2
Prepare yogurt layer: Mix yogurt with vanilla extract (and sweetener if desired). Keep chilled.
Step 3
Assemble the parfaits: In two glasses or jars, layer chia pudding, yogurt, and kiwi slices. Repeat if desired for extra layers. Top with toasted coconut and optional seeds or granola.
Step 4
Serve immediately or store in the fridge for up to 2 days.
